Try These Tuna Muffins as a Special Low Carb Meal

This low carb diet recipe was a pleasant surprise as these muffins were very tasty and pretty darn convenient. Of course, I used canned tuna in the recipe (rather than the salmon) as this is one of my favorite fish. I am sure that they would have been just as scrumptious if I had used canned salmon – it’s your preference.

The Old Bay Tuna Muffins were very filling and extremely flavorful. I made them in a regular muffin tin and they seemed to be just the right size for my low carbohydrate diet plan. Here is the quick and simple recipe:

Old Bay Tuna or Salmon Muffins Ingredients

    • 2 – 6 oz. Cans of salmon or tuna (drained)
    • 2 – Eggs
    • Salt & Pepper to Taste
    • 2 tsps. – McCormick Old Bay Seasoning

    Spice It Up (Optional):

    • ¼ cup – Chopped Celery
    • 2 tbs. – Chopped Onion
    • ¼ cup – Chopped Green Peppers
    • 2 oz. – Shredded Cheddar Cheese

Directions:

1) Mix all ingredients together thoroughly

2) Pour in to well-greased muffin pan

3) Bake for 30 minutes at 350 degrees, or until puffed and top is light brown


There you have it – a simple yet delicious tuna (or salmon) muffin that should certainly be added to anyone’s quick weight loss diet plans. And once you tasted one of these delectable meal treats, I wouldn’t be surprised if they didn’t become one of your low carb favorites, too. They’re definitely on my list!


Spice Up Your Low Carb Diet with Savory Chicken Sausage

This chicken-based item makes a fantastic addition to any breakfast or dinner menu. This is just one of our great recipes that comes from our Best Low Carb Diet Menu and is a perfect addition to your low carbohydrate diet plan.

The nice thing about these patties is that they freeze easily and can be ready for the table in the blink of an eye. We like to mix up a big batch, part for the day’s low carb meals and the rest for the refrigerator, to use as a quick pick-me-up snack or combined with a broad leaf of lettuce for a nice wrap.

So, let’s stop dreaming about these scrumptious chicken sausage patties and get to making up a batch! The ingredients are nothing out of the ordinary and should be readily available at your local grocery store.

Ingredients

  • 4 - skinless chicken breasts, ground (ask butcher to grind them)
  • 2 - green onion, finely minced
  • 1 - egg white, well beaten
  • 2 tsp - poultry seasoning
  • 1 tsp - ground sage
  • 1 tsp - ground fennel seed
  • 1 tsp - garlic powder
  • 1 tsp - onion powder
  • 1 tsp - paprika
  • 1 tsp - salt & black pepper

Instructions:

1) Mix ground chicken, green onion, egg white and spices together. Form into 12 small patties. Each patty will be roughly 2 oz lean protein.

2) Spray nonstick skillet with Pam and place patties gently inside, pressing down slightly. Cook over low-medium heat until lightly browned, flip and cook until reverse side is lightly browned.

3) Freeze leftovers with a layer of waxed or parchment paper between to prevent sticking together. Reheat in the microwave for 20 seconds or til warmed through.
