Setting Goals with a Low Carb Diet and Fast Weight Loss Plan

As I’ve written before, you can expect to hit periods when you won’t lose a pound (a stall in Kimkins Diet speak) for days or even weeks. Pressuring yourself by setting unrealistic weight loss goals will only create frustration and even depression.
The lesson here is to be reasonable when setting your weight loss goals!
It’s a Journey, Not a Sprint
In my case, I’ve decided to make my next weight loss goals; 175, 150 and 125. I’m hoping to hit 175 pounds or below before my next trip. I’ve decided to go to NY with some friends for a long weekend and it would really be nice to be below 175 before I leave. Will it be the end of the world if I don’t quite get there - of course not.
The fast weight loss journey is one that does not move in a straight line downward, but more in a stair-step fashion. You may even find yourself gaining a pound or two before the next big weight drop.
It’s the Little Rewards that Count the Most
When it comes to buying clothes though, I’ve learned my lesson about buying too many clothes during the trip down the scale. But it was a situation where I just couldn’t help myself that first time out! So what do I do now? I concentration on new shoes!
I’m thinking that the New York trip itself will be the reward for hitting (or coming close) to my weight loss goal. Perhaps it can also be an early birthday present.
Don’t be Afraid to Celebrate Your Weight Loss “Successes”
I feel that I have been pretty successful at hitting my weight goals so far. And therefore, buying myself little “success” presents over the last four and a half months has made me think that the birthday thing doesn’t seem all that important anymore. My focus is on fast weight loss , not birthday celebrations (usually just another food extravaganza).
I’m hoping to be under 150 by the time I get to my birthday. We have a trip planned back home in October (over my birthday) and will love to see the surprised look on my family members faces - they have no clue that I have been on a diet!!!!
Just another little benefit from sticking to my low carb diet and fast weight loss diet plan.

Low Carb Diet Recipe for Egg Muffins

Looking for a quick breakfast that can be cooked in less than 60 seconds? This low carb diet recipe from the Kimkin Diet people is ideal for the busy low carb dieter who likes to eat and run. These delectable egg muffins are the ideal heat and go breakfast (or any other time you need a quick pick-me-up).
All you need to do is make up a batch, bake and freeze. You can reheat the egg muffins in the microwave and you’re on your way!
Ingredients
12 - eggs
1 - tsp Spike Seasoning
1 - cup grated low fat cheese
3 - green onions, minced Red pepper, zucchini or mushrooms, minced (these are optional)
Canadian bacon, lean ham, or crumbled cooked turkey sausage, minced (optional)
- Preheat oven to 375 F.
- Use regular or silicone muffin pan, 12 muffin size. If using silicone pan, spray with nonstick spray. If using regular muffin pan, put two paper liners into each slot, then spray liner with nonstick spray.
- In the bottom of the muffin cups layer the diced meat and veggies (if using) plus cheese and green onions. You want the muffin cups to be about 2/3 full, with just enough room to pour a little egg around the other ingredients.
- Break eggs into large measuring bowl with pour spout, add Spike, and beat well. Pour egg into each muffin cup until it is 3/4 full.
- Stir slightly with a fork to mix veggies and meat. Bake 25-35 minutes until muffins have risen and are slightly browned and set.
These delicious low carb diet recipe will keep for at least a week in your refrigerator without the need for freezing. If you want to keep them for an extended period, the egg muffins can be frozen and reheated. For the best results, you should thaw them in the refrigerator before reheating.

Try This Low Carb Diet Recipe - For Chicken Lovers Everywhere

If you have a hankering for chicken, you should try this really great low carb recipe - Grilled Garlic Rosemary Chicken. It has been provided by the fantastic folks at Kimkins Diet Plan and comes highly recommended as a great way to eat savory tasting foods while sticking to your low carbohydrate diet (preferably the Kimkin Diet Program!).
Ingredients
- 4 boneless chicken breasts, butterflied (see below)
- 3 tsp fresh rosemary, finely minced
- 2 tsp garlic powder
- 1 tsp red pepper flakes (optional)
- 1 tsp black pepper
- Pam olive oil spray
- You will need to butterfly the chicken breasts. To do this you will slice through the middle horizontally stopping 1/2″ before the edge. Flip the chicken open like a book, place between 2 pieces of cling wrap (like Saran Wrap) and with a heavy can, mallet or saucepan, pound out to 1/2″ thickness (Great for taking out any frustrations built up during your busy day!). What you have created is a paillard.
- The beauty of this chicken dish is that you have a variety of options for your chicken — including stuffing, rolling, slicing thin for stir fries or soups. Our recommendation is to grill them whole on your BBQ.
- Place the paillards on a large baking sheet or clean flat surface. Spray lightly with Pam.
- Sprinkle evenly with half of the garlic powder, rosemary and red and black pepper. Press rosemary in lightly. Flip chicken and repeat.
- Fold chicken in half and cover to marinate for 30 minutes until your BBQ grill comes up to temperature. When grill is ready (very hot grill), cook chicken 3 minutes on each side and serve!

My Kimkin Diet in Miami - Watch the Salt!

While on the trip I did not cheat once with any carbs or alcohol, but I did go over my usual calories more than a couple of days. Allowed with the Kimkin Diet, but not good on a daily basis, are the “once in a while” items that I consumed almost every day. I didn’t measure the salad dressing etc…
I did snack on almonds and Slim Jims (lots and lots of salt) and I think those may have been what saved me from “the big cheat”. As a result, I returned, with lots of new clothes, and only a couple of “water weight” pounds to shed – which I did quite quickly.
I mentioned before that I had a little prize waiting for me once I hit the 200 mark. Well, one day I was in a local jewelry store getting my chain fixed and I saw a beautiful ring. I decided to buy it for myself and ask my husband to tuck it away in our safe and only give it to me when he saw the scale under 200.
I went off to Florida without my ring, but I did get it shortly thereafter. I’m very proud of my accomplishment, but am also very mystified as to why I was able to lose weight so quickly this time while all of the other times (a host of different diet plans) I only faced failure.
I think that the Kimkin Diet is really something special and with all the support, helped me stay on track better than the other diet plans (Atkins, Weight Watchers, South Beach, etc.) I also think that the way you lose weight with Kimkins sets the diet apart from the others. A quick weight loss diet like Kimkins gives you immediate results – no time to get overly discouraged and quit. It really makes a big difference when you don’t have to feel that you will be dieting for years to get to your weight goal. (Just my thoughts!)
Now I realize that I have many more pounds to go to my Kimkin Diet goal and that I could slip and gain weight back like before, but for some reason I don’t think I will this time.
