Getting Back on the Fast Weight Loss “Trail”
August 11th, 2007    Subscribe To Our FeedOn August 1, I decided to kick start my fast weight loss diet plan into high gear, again! It was time to get back to the stricter Kimmer Experiment and behave myself. I have been doing great ever since.
I have now lost more weight and am now down to 187 pounds (over 72 pounds in total so far) as of this morning. My husband bought me a George Foreman grill (for grilling salmon patties, lean burgers, and fish fillets) and I intend on using it daily to grill my protein.
A big thrill this week was that I went to the store over the weekend and purchased a pair of size 10 Petite jeans. They are still a bit tight but I have them hanging in my closet and trying them on every weekend for inspiration.
It occured to me that I haven’t updated my measurements on the Fitday Diet software for a couple of months, so I might just do that tonight. I’ll post the total inches lost, just for fun, in the next few days. Stay tuned from one BIG believer in the Kimkins Diet Plan!

Try This Low Carb Diet Recipe - For Chicken Lovers Everywhere

If you have a hankering for chicken, you should try this really great low carb recipe - Grilled Garlic Rosemary Chicken. It has been provided by the fantastic folks at Kimkins Diet Plan and comes highly recommended as a great way to eat savory tasting foods while sticking to your low carbohydrate diet (preferably the Kimkin Diet Program!).
Ingredients
- 4 boneless chicken breasts, butterflied (see below)
- 3 tsp fresh rosemary, finely minced
- 2 tsp garlic powder
- 1 tsp red pepper flakes (optional)
- 1 tsp black pepper
- Pam olive oil spray
- You will need to butterfly the chicken breasts. To do this you will slice through the middle horizontally stopping 1/2″ before the edge. Flip the chicken open like a book, place between 2 pieces of cling wrap (like Saran Wrap) and with a heavy can, mallet or saucepan, pound out to 1/2″ thickness (Great for taking out any frustrations built up during your busy day!). What you have created is a paillard.
- The beauty of this chicken dish is that you have a variety of options for your chicken — including stuffing, rolling, slicing thin for stir fries or soups. Our recommendation is to grill them whole on your BBQ.
- Place the paillards on a large baking sheet or clean flat surface. Spray lightly with Pam.
- Sprinkle evenly with half of the garlic powder, rosemary and red and black pepper. Press rosemary in lightly. Flip chicken and repeat.
- Fold chicken in half and cover to marinate for 30 minutes until your BBQ grill comes up to temperature. When grill is ready (very hot grill), cook chicken 3 minutes on each side and serve!

A Real Test for the Kimkins Diet Plan
June 27th, 2007    Subscribe To Our FeedI just got back from a week in Miami with my husband shopping for building materials for our new house (how exciting - NOT!). I took advantage of the opportunity to pick up some new clothes because I have moved into uncharted territory (at least for the last 18 years) and have gone through all of my wardrobe sizes I had stashed away for “thinner” days. What a great excuse for going clothes shopping!
But this trip tested my resolve to stay on my Kimkins diet, especially with eating out for every meal. The challenge was to find and stick with all low carbohydrate foods at the restaurants we visited. Well, it was actually easier than I thought. At times, I had to be a little creative and request that they eliminate this or add a portion of that. The only potential problem I saw was that a lot of the food was high in sodium - lots of salt. But in the end, I feel that I pretty much stuck with the diet and didn’t stray to sugary deserts or mega-carb dishes.
Obviously, the proof would be facing me on the read-out on my trusty scale. I stepped on the scale in the morning and what a surprise - I had gained 8 pounds in only 6 days - what a shock! And what a bummer.
When I told my husband about the gain he told me that he had tried the scale earlier that morning and had a crazy reading and thought that it may be time to change the batteries in the scale. Were my prayers answered? I got back on the scale and breathed a major sigh of relief (after getting on and off the scale two more times). I had picked up only 2.5 pounds and I suspected that it was basically water retention due to all the salty food. We will see over the next few days.
So, I survived a real test of my diet commitment and the Kimkins diet plan won out. All the support I received from the forum and the Kimkins website obviously played a major role in this “test”. I am proud of myself for sticking to the diet and am even more committed to reaching my weight goal.
I’ll let you know if that 2.5 pounds comes off as easily as it went on - let’s hope so!

Does Drinking and Dieting Mix on the Kimkins Diet Plan?

They were discussing alcohol on one of the Kimkins Diet forums today. Some think it is OK to have just one alcoholic beverage. To be more specific, it was a rum and coke (diet, of course). The general consensus was that if the calories are low, meaning no sugary mixers, and you stick to just one – technically you shouldn’t gain.
Some think just one drink wouldn’t even knock you out of ketosis. I am presently on a power drive to get under 200 by mid-June, so I’m not even thinking about giving this theory a try right now.
Some of the posts did indicate that even one drink might have a big effect on the diet. They worry about losing control and having that one drink leading to another and another. It all really becomes just a control issue at that point.
And, of course, along with drinks usually come snacks – so I guess the whole evening could add up to one HUGE disaster. This is a simple case of the drink not breaking any of the diet rules, but causing a much bigger problem because of that evil thing called “temptation”.
Party Time!
This weekend I went to a dinner party where the main dish was lasagna. Well you can’t even pick around in lasagna. The sauce, if jarred, probably has sugar. The cheese is a no-no and we don’t even have to talk about the noodles. I just told the hostess about my diet, and she was gracious enough to throw a piece of chicken on the grill for me so that I could have it on my salad.
She hadn’t seen me for a few weeks and was really surprised with the results of my diet. I drank diet coke all evening and all went well. The only think I would have done differently is switch to ice water, since I really don’t think I got drank enough water during the day.
Diet “Wisdom”
I found that the Kimkins Diet Plan, like any other, is somewhat of a learning experience and you adjust your habits as you go along. Like I said in another post, certain diet rules, though technically sound, won’t work for everyone. You really need to find your own “special” path within the framework of your chosen diet.
You know what your weaknesses are, so just avoid them rather than convincing yourself that it’s OK because the food or drink doesn’t violate the diet rules. It’s really not worth jeopardizing all of your weight loss progress over a simple decision - just don’t do it!
