One of Kimkins members has organized a special cruise for all of the Kimkin members and non-members who would like to get away on a 5-day Mexican cruise vacation. The cruise is scheduled for February 23 through the 28th with stops in Galveston TX (starting point), Cozumel, Progreso / Merida, and back home again.
It appears that Kimkins will have access to a conference room which will be available for any meetings or seminars that may be scheduled. There are also tentative plans for a talent show, Kimkins cooking demo and door prizes!
The best part is that the goal of the cruise is to just relax, to mingle and make new friends - lots of fun with no pressure to do anything!
The meals being served will not be exclusively Kimkin diet meals. But it will be a good opportunity to practice good choices in the face of temptation! You might be surprised how well, and healthy, you can eat if you just ask your waiter for food prepared especially for you.

The Best Low Carb Diet Menu - Beef Roulade

Here is one of the best low carb diet menu items for all of you beef lovers - a Beef Roulade. This rolled steak is delicious and keeps within the Kimkin Diet plan guidelines. It is a very attractive looking meat course, yet is very easy to prepare.
Beef Roulade Ingredients
- 3 lbs flank steak
- 1 cup Kimkins veggies, chopped “smallish”
- 3 Tbs garlic, minced (jarred OK)
- 0.5 Cup mozzarella, shredded, part skim to taste
- Salt, pepper & garlic powder
Instructions
- Have your butcher pound out the steak or do it yourself with a meat mallet to about 1/4″ thick
- Sprinkle the steak with spices, veggies and minced garlic
- Sprinkle with mozzarella and press all layers down gently
- Begin rolling the meat from one end being careful not to squeeze the filling out. End seam side down.
- Pam spray large baking dish
- Bake at 350 degrees for 60-90 minutes, or until meat thermometer reads 150 degrees at the center of the roll
- Remove from oven, cover loosely with foil and let set for 10 minutes
- Slice in 1″ slices (2 slices per serving)
- Arrange so the center shows the pinwheel design
This is one of the best low carb diet menu items and just happens to be one of Kimmer’s favorites. We think that this recipe will please even the “pickiest” of family members. So, why suffer through one of the other diets pre-packaged meals when you can make your own scrumptious steak with a fancy twist - a Beef Roulade!

My Kimkin Diet on Cruise Control - Weeks 7 & 8

More Weight Loss - Weeks #7 & #8
These two weeks went by quickly and smoothly. I didn’t deviate from the Kimkin Diet one iota - ate protein, a few carbs, and lots of water. Dinners out went very smoothly.
I’ve gotten into a bit of a boring routine by cooking most of my dinners on the weekend and sticking them into baggies and then just grabbing them during the week. It takes the scary moments I used to have with standing in front of the open refrigerator trying to decide what to make (and not grabbing a taste or two).
I have gotten into the habit of not eating lunch if I am not hungry (really just common sense at this point) and then eating a regular dinner with maybe a little extra protein. My calories are dipping under 500 a day, depending on which protein I choose. I am avoiding all dairy products, though. Dairy is technically “low carb”, but because they really give me a craving for more, have lots of calories, and for some reason slow down my weight loss, I chose to just avoid them.
Anyway, at the end of 8 weeks on the Kimkin Diet – I’m at 217 or about 42 pounds down. The good news is that we are almost caught up – my next post will be it and then the good old “daily” diet grind stuff.
Just so you know, I passed the 50 pounds mark today (hurray!). Another newsworthy item is that Kimmer of Kimkins was featured in Woman’s World magazine this week, along with two of the Kimkins Diet followers - Christin and Deni. My Kimkin Diet Plan Progress – Weeks #5 and #6

I am attempting to catch up to the present on my progress with the Kimkin Diet plan so I can give you more of a live update in the future. Unfortunately, a little thing like my job is getting in the way, but I promise that I will try my best to update you on weeks 7-8 shortly, and then onward in real time.
Just to let you know, I have lost 49 pounds so far and haven’t lost any motivation to keep going. But I did learn an important lesson during the fifth and sixth week – you can’t believe everything you read about low carb dieting rules because it may not apply to you!
The Devil Made Me Do It!
Well even with the best intentions, a slip-up can happen at any time. I was cruising along doing great and thought that I could handle having sour cream and Velveeta cheese in the refrigerator. It all started off innocently enough - I used a can of Ro-Tel tomatoes and some Velveeta to make a quick dip for my husband and I decided to do just a “little” taste (Uh-Oh!).
I could rationalize it away since it really didn’t have any carbs. A little taste quickly became several little fingers full and then the sour cream started. I started putting just a teaspoon on “this” and “that” to add taste.
My calories were just a little higher than normal each day. But my weight went up and down with the same pound for a least a week. I finally admitted to myself that I just couldn’t handle having those two ingredients in my house (I blame my husband, of course).
So, I woke up on the Sunday morning going into week #6 and put the rest of the cheese dip and the sour cream down the garbage disposal. We just don’t buy those items anymore - at least for now.
The Kimmer Experiment to the Rescue
The remainder of the second week I stayed on the Kimmer Experiment and quickly lost weight – seven more pounds. I guess in the end I did OK, but I’ll tell you… I learned my lesson and will never do that again.
Luckily, I didn’t do any major damage, but I realized that I momentarily lost sight of the Kimkin Diet goal – fast weight loss! I now log into my FitDay PC Software each and every day and meticulously keep track of every spoonful of anything I stick into my mouth before I eat the next meal. When my calories reach my goal of 500 a day, I stop eating. Simple as that! What I found was that I wasn’t eating for hunger at that point, just chowing for the entertainment value.
Not All Diet Plan Rules Work for Everyone
On another note, I’ve discovered that regardless of the fact that cheese does not have carbs, it still tends to stop the weight loss. I had previously read about several others on the Kimkin Diet site having problems with this, but it was still puzzling to me since both Adkins and South Beach allow at least fat-free cheese. Maybe that’s just one more reason that you don’t lose weight nearly as fast on these diets. Anyway… no more cheese for me!
